Char siu bau are Cantonese barbecue pork buns filled with barbecue flavoured cha siu pork. They're served as a type of dim sum but can also be found sold in Chinese bakeries.

These char sui bau can be either steamed or baked. This version has been steamed, resulting in a fluffy and white exterior. The dough of steamed cha siu bau is unique since it makes use of both yeast and baking powder as leavening. This unique mix gives the dough of steamed cha siu bao the texture of a slightly dense but fine soft bread.


Opinion?

I sometimes find char sui bau to be a little too dry to eat during yum cha. Everything else is nice and moist and these bau just clog up my throat.
